Application of Resolution of the Collegiate Board No. 216/2004 in Restaurants in the City of Montes Claros-MG

Abstract

Hygienic-sanitary control is crucial for obtaining safe food. As a result, Resolution of the Collegiate Board (RDC) No. 216 of September 15, 2004 was created by the National Health Surveillance Agency in order to reduce the risks of foodborne diseases. Therefore, the objective of this work was to carry out the application of RDC nº 216/04 in three restaurants in the city of Montes Claros-MG. A checklist was applied in accordance with current legislation, to assess the hygiene and health conditions of the establishment's environment. In addition, a questionnaire containing questions about the resolution was applied to the handlers. To obtain the results, the percentage of non-conforming sub-items from restaurants A, B and C, and the arithmetic mean of the verified sub-items were calculated. The percentage of non-compliance for each restaurant was 39.44% (A), 62.40%(B), 64.23%(C). As for handlers, the highest percentage of errors were about: food contamination, foodborne diseases and good handling practices. In view of the results, it was observed that a significant number of non-conformities in all restaurants, taking into account the fact that these companies did not comply or did not have the knowledge about the resolution.
